We used to live in Brechin, Angus, Scotland and we used to go to an Indian restaurant in Montrose, Scotland and order Lamb Biryani. It was a rice pilaf served with a lamb and vegetable currry that came in a separate dish and then we put it over our rice pilaf. It was very juicy and delicious and sometimes there were different vegetables in the curry, but it was all great. then we moved to the US and when we went to Indian restaurants over here, the Lamb Biryani here is just a rice and meat dish that is quite dry and has no other sauce with it. Does anyone have any idea what we were really being served in the Montrose restaurant? I have checked all sorts Indian recipes and none of them even come close. anyone have any ideas?
i dunno. but i really like Jaipur vegetables by the company "Tasty Bite"…. you ought to be able to find it in the ethnic section at a supermarket. it's a vegetable curry. It would probably taste pretty good poured over a biryani. They also make a nice Peanut Sauce with Noodles.
Maybe your restaurant started with some ghee and spices in a skillet, and then added flour to make a roux?

Sounds like you were getting the real thing in Montrose.
Lamb biryani is spicy dish with lamb in dry rice and served separately with sauce made of yogurt and onions and thin lamb gravy. This is how it is served in India.
All nations have their own interpretation of Indian dishes.
For example,a traditional Indian restaurant `in` India would probably scoff at or not know what a chicken tikka massalla is!
It,and most other dishes including your biryani has evolved to suit british tastes.
Myguess at what you are being served in the U.S.is a Pathia or Korahi but i think it is `their` interpretation of the biryani.
Sadly you will have to move back to blighty if you want a REAL RUBY!
Authentic Indian Lamb Biryani is a dry rice and meat dish (the cooking process is laborious and complex).
What you are describing is a type of Lamb Curry with vegetables served over rice, this is definitely not lamb biryani!
